Sesame Noodles
I converted a big bowl of leftover cooked ramen into a first course of cold sesame noodles. Simply mix sesame paste, soy sauce, black vinegar and a bit of minced garlic for the dressing. Pour dressing over noodles and add chopped cilantro or green onions for color.
I like my noodles dry, but if you prefer something moist use a little water or oil in your dressing. For a spicy kick, add a little "ma la" hot sauce. Black vinegar is Chinese black vinegar. Sherry or rice wine vinegar can be used as a substitute.
